Toor Dal - 1cup
Water - 3cups
Veggies - 1/2cup cut into 1/2" pieces (like munakkaya, carrot, bendakaya, sorakaya or anything you have on hand)
onions - cut into 1/2" pieces
green chillis - slit
tomatos - 1big chopped
Tamarind paste - 1 heaped tbsp
ginger garlic paste
coriander powder - 1tsp
methi powder - pinch
cumin powder - 1tsp
turmeric - 1/4tsp
coriander leaves - chopped
mustard seeds, cumin seeds, red chillis, curry leaves for popu

sugar - 1/2tsp to balance the sourness of the chaaru

Cook toor dal and water in a pressure cooker until soft.
Heat oil in a pan. Add mustard seeds, cumin seeds, red chillis, curry leaves, methi powder, turmeric. When they start spluttering add onions and green chillis. When they start browning add ginger garlic paste. Cook for a minute. Add veggies and cook until 3/4 done. Add tomatoes and cook until soft. Add tamarind juice/paste, coriander powder and cumin powder. Cook for 2min. Add cooked dal and mix. Add more water if needed to get charu consistency. Add salt and sugar. Boil for 10min on a medium flame while mixing every 3min. Garnish with coriander leaves. This has a little milder flavor compared to sambar and will taste good with rice.
