Artikaya Podi Iguru (Green Plantain Fry with Tamarind)

My friend Shruti is from Bhimavaram. This is her recipe. It is healthy because we can use very little oil.

Peel green plantain and boil it in water.
Touch it to see if it is boiled.. It should not get too soft.
Heat oil in a pan and add mustard, jeera, chopped garlic, curry leaves, urad dal, turmeric, chopped green chillies, red chillies and salt. Fry for a min.
Add tamarind paste and mix.
Mash green plantain little bit and add it in the pan. Mix thoroughly.
Taste it and adjust salt, tamarind etc…
Fry for few minutes. Garnish with chopped coriander leaves.
